We’re midway through January or, more importantly, Veganuary so you’re probably either desperate for some cheddar or considering continuing this plant-based lifestyle into February. No matter where you stand, here are 3 vegan recipes you will definitely want to take with you into your day-to-day life!

An Affordable Option…

A real misconception about going vegan is that it is expensive. People hear ‘plant-based’ and immediately jump to over-priced salads and £5 tubs of hummus but that really does not need to be the case. The Stingy Vegan has a whole host of affordable, tasty vegan recipes. The best part is that they clearly price all of their ingredients, admittedly the pricing is in US dollars, however, it still gives you a rough idea.

My personal favourite is the vegan stir fry! It is very affordable, can be cooked in bulk, and is packed full of veggies. If you struggle to get molasses, try honey or just brown sugar, both have a similar taste and are much easier to find. The beauty of a stir fry is that it can be personalised and catered to your taste. So, don’t be scared to change up the veggies, I love having aubergine in my stir fry as it really soaks up the flavour but whatever you fancy goes. If you see green beans on offer, whack them in! You want some spinach, go ahead! It may not be the most authentic stir fry in the world but it will still be tasty.

The Crowd-pleaser…

Just because you’re having a dinner party doesn’t mean the food can’t be plant-based! A wellington is a real crowd-pleaser and goes perfectly with regular roast dinner accompaniments (you can’t beat a roastie!). The best part is that a lot of shop-bought pastry is actually vegan, so you don’t even have to worry about making your own. My personal favourite is Jus-Rol Puff Pastry Ready Rolled Sheet, it gives your wellington the crispy flake that makes any pastry so more-ish.

Now for the filling. Mushrooms have a great, meaty texture, so they’re perfect if you want to give your wellington a bit of structure and bite. Check out this Deliciously Everyday recipe for inspiration. It’s tasty on its own but don’t be scared to experiment, I add a bit of oat cream which was amazing! What’s even better about this is that you can make the filling ahead of time and assemble it once your guests arrive.

In a Hurry…

Midweek meals are always a bit of a drag, so you need a few quick go-to meals that are tasty and simple. This vegan gazpacho sauce pasta by Olive Magazine is so delicious and quick you won’t believe your luck. It’s essentially a simple raw tomato sauce with a bit of kick that is filling and nutritious. The best part is it only takes 15 minutes to cook (there is really very little effort required)! Top with vegan cheese for the best results, Violife does a great vegan parmesan.
